What kind of tea do the serve at Chinese restaurants?

green tea is generally not served at normal chinese restaurants as it is a) pricer and b) does not hold well to boiling hot water and just sitting around in a pot all day.

japanese restaurants tend to serve green tea--sencha more likely.

at chinese restaurants, they serve black tea--a generic orange pekoe tea. if you were at nicer places, they might serve you a oolong tea or jasmine. and at dim sum restaurants, you can have your pick of oolong (a nice tannic tea), pu-erh (reputed to be a dieter's tea and helps digestion), jasmine (fragrant) or chrysanthemum (best enjoyed with a cube of sugar).
