Have you ever tried Aji de Gallina? Or any other Peruvian dish?

What are your thoughts on it? It's my favorite Peruvian dish... I really think I should try some others.. I've had bistec a la pobre and tallarines verdes.. and salchipapas.... I'm going to try chunyo (sp?) and ceviche here soon...

What other Peruvian dishes have you tried?
