DO YOU EAT IT ALL AT ONCE? MEANING DO YOU PUT THE WHOLE ROLL IN YOUR MOUTH OR IN BITES?

Mix the wasabi into the soy sauce in a small dish and dip it in.
The rice will start to come apart after dipping, so people will probably want to put it all in at once. I have never heard any rule about it, so if you are talented with your chopsticks and want to try taking smaller bites, I think it's OK as long as the roll doesn't get messy. Some rolls can be pretty big.
You can also eat the fish and the rice separately if the 'sushi' is a piece of fish on top of rice. Don't let some jerk you how to eat (everyone tries to be a Japan expert these days) - Japanese people do it all different ways.
