Answers:

The best way to learn sushi is to go with someone you trust who is experienced. Have them choose the restaurant. Going blind when you don't know what is or isn't good just doesn't make sense. You could end up in a lousy restaurant and hate everything when the same items prepared in a great restaurant could bring you back again and again!

Sit at the sushi bar and tell the chef that you're a novice. Ask them to start you off slowly, one item at a time. Watch what others are ordering and don't be afraid to make conversation. Most people enjoy sharing their knowledge and views. Be sure to write down everything you try and give it a score so you know what to order next time.

Many restaurants are going over the top with exotic rolls that contain everything but the kitchen sink. You will not find these rolls in Japan. The real deal is simplicity. If the fish is fresh, the rice properly cooked, the wasabi aged perfectly, just a small dip into some soy sauce is all you need to use to enjoy your sushi! Eat a piece of ginger and drink tea or water between items to cleanse your palate.

Have fun! Oh, and if you like what you get, buy the chef a beer!
