What kind of fish do i use to make sashimi?

I bought some salmon cleaned it with water a couple of times, but the smell won't go away. I tried vinegar, that was a mistake. It tasted so sour. Now i don't know what type of fish to use, and how to clean it. :(


Answers:

If the salmon smells funny PLEASE DON'T use it, do not risk the fish being bad. Good fresh fish should not smell fishy. Ok, you need to try tuna for really great sashimi. Just make sure it is very very fresh and has no smell at all.

SASHIMI (SLICES OF RAW FISH)

2 squid, raw
14 oz. raw tuna (cut into fillets)
Horseradish
Soy sauce
1 dried sheet of seaweed

1. Slice tuna, starting from ends, into 1/2 inch squares in a cutting motion toward you.
2. Remove legs and top fin of squid; then remove skin. Make slits on surface 1/5 inch apart lengthwise, taking care not to cut through. Affix a sheet of seaweed to the bottom and roll squid, then cut.

3. Place tuna and squid on a plate. Garnish with horseradish. Dip sashimi (sah-she-me) in soy sauce and eat!
