Can I freeze some of my home-made sweet pickle relish in zip-lock baggies? I am out of canning jars.?

Will it turn the relish mushy? I hate to waste even a few of my garden's cucumbers, peppers, onions and herbs, so if I need to buy new jar I will - just need a few more, but wondered if I can freeze instead?

Yes you can, but buying some more jars and continuing to do what your doing is the best thing for the reason that you have presented.
