Question:

I made beef enchiladas for dinner. Why did they fall apart when serving?

This is what I did...
warmed the corn tortillas in baggie in microwave for about 20 sec. , this softened them - instead of frying. Then cooked the beef and seasoned. Rolled them w/ beef and little cheese, poured can of sauce over and covered/ baked for 30 minutes @350 degrees.
When I served them they fell apart. What did I do wrong?
Also, they didnt taste GREAT... edible but not great. I think it was the canned sauce. Any recipes for authentic "red sauce" recipes?

I assumed it was from not frying the tortillas.... I was trying to cut calories... WONT DO THAT AGAIN!!


Answers:

Because you didn't fry them. They need to be kinda crispy to prevent the sauce from soaking through. I prefer the white sauce made with chilies and jack cheese personally.
