I have some bone in chicken thighs and want to make real pollo asado. However I have no grill and would like to simmer these on my stovetop so they fall apart. Any ideas how to make delicious taco shop style pollo in my kitchen?

No need to simmer. Place the chicken in the marinade (onion, garlic/salt mixture,
wine, olive oil, and vinegar blended ).
Submerge and turn to coat well, and cover with plastic wrap. Keep refrigerated overnight, turning every 6 hours. This will make it very soft.
Remove the chicken from the marinade; oven-bake 375 F, skin side up, until it reaches an internal temperature of 165 degrees F at the center of the breast. Discard the marinade; there’s no need to use it for basting because the chicken is so juicy!
