Isn't it funny how our taste in ethnic food changes?

I used to love mediterranean and chinese, but now I love thai and indian.

Good observation. I totally agree.

I think it's taste that are new (to us) in flavors and textures.
Thinking of Thai... The food is layered with savory, sour, sweet and spicey where it all works together.

Chinese entrees, for example, pretty much centers around savory. Maybe added heat, but definately not as bold as Thai cuisine.
