How long does sesame oil keep?!

Question:

How long does sesame oil keep?

I know sesame oil is not very shelf stable, but I keep mine in the fridge, what is the shelf life of sesame oil in and out of the fridge?

Answers:

What kind of sesame oil is it?

Chinese sesame oil--the strong, pungent brown stuff--will not keep very well in the fridge. Compounds in the oil will start to separate, thus causing it to be bitter.

Actually, even in a warm and damp environment, sesame oil can last up to six months. I have no idea why people say "two to three months"--in Chinese households and restaurants, they keep large amounts of oil for up to half a year.
