What is that spicy green stuff that you eat with samosas?

how do you make it? how do you make vegetable samosas?


Answers:

It is a mint and coconut chutney made with green chilis, basically you put the whole lot in the food processor and buzz it.

For 2 cups of chutney, I use a good bunch of fresh mint (washed, leaves only), 1 cup of shredded unsweetened coconut, 2 medium chilis (but you can add more), salt, lime or lemon juice, a 1/2 cup of warm water, a dash of cumin, I like to add some cilantro, as it can take some of the bite from the chilis.

I puree it in the food process and add the water as it processes until it looks like a thick puree, stop the processor and check it, if you like it thinner, turn it back on and add a bit more water.

Before you take it out, taste it see if it needs anymore seasoning, but you can adjust it later after it had chilled, it will maybe need something.

I am a former chef, and worked in Canada, Singapore and Jamaica, and love to cook Indian food and have friends who own and run a Indian buffet restaurant.
