What makes for really good Sushi?!

Question:

What makes for really good Sushi?

Out of all the different types of Sushi out there... which kinds are your favorite? I eat at a japanese sushi buffet and I never know what to order.

Answers:

If the sushi buffet is good - keeps items fresh, uses fresh ingredients then it all should be pretty good.

One of my indicators is the rice. If the rice is gummy or too dry, then I'd be leery of the buffet.

Some of my favorites from a local buffet... The first four items are actually cooked items.
1. Unagi - broiled eels with a sweet terriyaki-like glaze. It's actually called unagi sauce, but terriyaki gives a better description to most people.
2. Tako - Octopus. It doesn't have a strong flavor, but I like the mild sweetess and the texture (chewiness)
3. Squid - Same with Octopus.
4. Seaweed salad topped - slightly briney, crunchy and a light sesame dressing. I believe it's mixed with chopped octopus.
5. If the fish is fresh, I like salmon, tuna and makarel.

My recommendation to you is to just give something a try. Even if you don't know what to order, just pick something. You might be suprised how good it is or not. This way you'll build your own list of likes and dislikes.
