I bought some authentic mexican melting cheese for queso dip, what do I mix with it?

I bought the cheese, and I melted it, but it isn't very dippable. I want to have just the cheese flavor, so I don't want to put in any salsa or anything like that. Does anyone know how I can make the cheese more dippable?


Answers:

You can make a cheese sauce by first making a roue. First you add about a tablespoon of butter (you can eyeball it). Then add about a teaspoon of flour. Cook over low-heat for a couple of minutes until it begins to darken slightly. The roue will help you get a nice texture. Add cream slowly (about a cup), stirring often, so as to avoid lumps. Add the grated cheese (alot, keep adding until you get the texture you like). Because you are only adding "flavorless" ingredients, you will get the flavor of the cheese. By using a roue you will have a nice creamy texture that wont coagulate on you (which might happen if you just melt the cheese with milk or cream.) Good luck and enjoy!!
