How often shoul a tapas menu be change ?

There are some all time favourite tapas in every restaurant that the customers want to order in anytime of the year..., like garlic prawns, Iberico ham, etc. So I would suggest you keep some popular items (like 6 at least) in your menu then have another 6 to 8 seasonal changes - in a period of every 4 to 6 months depends on how climate changes and the availabilities of the ingredients (mainly for the vegetables & seafood items). You also can have today's special to surprise your customers.
