This dip was provided to me by a friend who has passed away. He use to buy it at an ethnic shop. The dip is very fluffy, has black, green, Greek and other types of sliced olives in it. It is not a hummus. I have never seen it anywhere. Does anyone know what this might be or have a recipe? Thanks.

Answers:

Greek Olive Dip:

Ingredients:

1 large garlic clove
8 ounces cream cheese, softened
2 ounces Greek feta cheese
1 teaspoon red wine vinegar
1/4 teaspoon white pepper
2 cups assorted Greek olives, pitted and finely chopped
Salt to taste if needed
1/2 cup fresh Greek oregano, finely chopped
3 tablespoons roasted red peppers, diced (optional)

METHOD:

Peel the garlic and place in food processor with cream cheese, process until blended thoroughly. Add feta, red wine vinegar, and pepper, process until smooth. Stir in olives, roasted red peppers and Greek oregano by hand.

Chill 2-4 hours.
