Chicken tamales...?!

Question:

Chicken tamales...?

i'm 33wks pregnant and am craving some true chicken tamales. anyone know a quick and easy authentic recipes?

Answers:

Well, my recipe is authentic, but it ain't quick.

I make it with turkey (wild turkey, actually...). Boil the chicken, shred, and marinate for a couple of days in chili sauce. Not picante sauce, not Tabasco sauce, *chili* sauce.

Mix up a batch of Masa as per the instructions on the side of a bag of corn meal. The ingredients are warm water, lard, and corn meal (sorry, I don't have the ratios off hand). Do not try to make "healthy" tamales by trying to substitute something for the lard. It just doesn't work the same.

Soak your corn husks in warm water for around an hour before you are ready to start assembling. Slap about a tablespoon of maza in a corn husk, put some of the chicken on top, roll it, tuck the ends under, and stick it in a pot with a steamer basket. After they are all assembled steam them for about half an hour.

This recipe makes anywhere between a few dozen and a gazillion tamales, but they tend to go fast.
