Does anyone know a good flat-bread crust recipe?
I'm traditional italian, and i made a great pizza recipe-with amazing tomatos and mozzerella-its great-i created it myself, except i can't perfect the crust! mine alwyas comes out to fluffy, i want a great crispy one..any suggestions, or recipes? And please don't say 'go to epicurious.com' or any other websites-i'm looking for great traditional recipes!

For the dough, anyway, remember to use flour, salt, water and natural yeast, which is a fermented piece of dough; alternative choice is beer yeast. Any other kind of yeast should be avoided; also, no oil in the dough (exepted for some specific recipes)
