Authentic Mexican Food Recipes NO TACO BELL!?

I'm looking for authentic Mexican food recipe foods. Food that you would find in a restaurant not Rice-A-Roni or some nasty Taco Bell trash. I'm talking some old school Mexican grandmother that can't speak a lick of English type recipes you hear me!

this recipe came from an old mexican lady that immigrated to the USA, she spoke fluent english, so this may not qualify lololol

chimichanga's

you will need:

1 4poundchuck roast pork can be used too, buy the cheapest cut you can find

3 med onions
6 [4oz] or equiv. cans diced mild green chili
salt/ pepper

flour tortillas
refried beans
shredded cheese
sour cream, iceburg lettuce, diced tomato. guacamoli, salsa for toppings

boil the meat until it falls apart, remove from heat and shred it up, removing all fat and bone. skim the fat off the broth and return meat to pot, simmer until almost dry, add diced onions and green chili, salt/ pepper to taste [can also add garlic if desired] add just enough water to barely cover and simmer until almost dry.

warm flour tortillas and put small amount of meat into one, beans and cheese can be add if desired roll up burrito style, closing both ends and fry in very hot oil until brown and crisp.
frying only takes a couple of minutes, watch close. drain on paper towels

makes aprox 1 1/2 doz chimi's. extra meat can be frozen for future use

when I make these, the whole neighborhood wants to come
