What is the difference between soba and rice noodles?!

What is the difference between soba and rice noodles?

This recipie calls for soba noodles, but I am unable to find these in my grocery store. Can I substitute rice noodles?


Answers:

Soba noodle is made out of buckwheat flour, and rice noodle is, well, made out of rice flour. Anyway, soba noodles and rice noodles taste really different and soba noodles shouldn't be substituted by rice noodles. Actually in Japan, we don't typically use rice flour because rice noodles are not originally from Japan. And eating rice noodles are not really common, either because it's not Japanese food. So it's not really common to use rice noodles to substitute soba noodles.

I don't know where you live. But soba noodles could be found in organic food stores like Whole Foods Market, Wild Oats Market and so on. Or you can go to local Asian food stores to find the noodles. Or you can get soba online: http://www.maruwa.com/onlineshop/noodle/...
