Recipes for dipping sauce for vietnamese lettuce wraps?!


Question:

Recipes for dipping sauce for vietnamese lettuce wraps?

I had at my favorite vietnamese resturant and tried the lettuce wraps which came with a sauce that tasted like it had ginger, soy sauce and ??? It was wonderful unfortuantely the staff does not speak english so we were unable to get the recipe. Does anyone know what the recipes might be??

There are two sauces that I've seen depending upon the restaurant...

The first, which is the one I like (lime-fish sauce dressing) is best described in Erika's answer above.

The second is a peanut-hoisin sauce dressing, which I don't really like, but include here so you have the "other" recipe.

Dipping Sauce

2 tablespoons peanut butter (crunchy or smooth)
1/2 cup water
2 tablespoons hoisin sauce
2 or 3 fresh red chilies
2 cloves garlic
1 tablespoon sugar
chopped peanuts for garnish

Combine all ingredients for the dipping sauce, except the chopped peanuts, in a blender and puree. Put in a small serving dish, sprinkle with peanuts, and set aside.
