Asia people love crab. There are different kinds of crabs and also there are lot of ways cooking it, like Chili crab, pepper crab (black pepper or white pepper), steam crab, curry etc... The black pepper crab origin from one of the seafood resturant in Singapore. It is one of the local delicacy.
This recipe is for family cooking, slightly different from resturant cooking (easy & simple) :-

1. 1.5kg of crab (about 4 depend on size, bigger the better),
2. 60 g of black pepper (ground),
3. 30 g of gralic (chop fine), 4 slice of ginger,
4. 3 spoons of butter,
5. 3 spoons of cooking oil,
6. half tea spoon of salt,
7. 1 tea spoon of sugar,
8. 2 spoons of chinese cooking wine,
9. half cup of water,
10. 2 tea spoon of corn starch.

First things, cut the crabs into 2 pieces (or 4 pics if bigger), remove the lung and wash the crabs to clean. Heat up the cooking wok, put in the butter and cooking oil. Follow by the chopped gralic and ginger, than stir fried till golden brown. Add in the ground black pepper and stir fried for 2 mins and follow by the crabs pieces.Stir fried the crabs for 1 min and add in the salt, sugar and half cup of water. Boil and stir fried for 15 mins until the crabs are cooked. At last, add in the cooking wine and corn starch, cook for 1 more min. Ready to serve hot.

In resturant, before stir fried the crabs pieces, they will deep fried them in seperate wok first to shorthen the cooking time. The butter play an important part in the cooking as it will give a special favour. Using the ground black pepper make the dish more tasty as compared to using the pepper sauces. You can adjust the quantity of black pepper used for this dish depend on how spicy you want the dish to taste.
