Question:

What is the most delicious dish in your national cuisine? (don't forget to indicate your nationality, please)

Answers:

I am a Filipino (from Manila, Philippines). We have a lof of delicious dishes in the Philippines, most of them deadly. Why deadly? Because the dishes are full of fats because the main ingredients usually involve pork, beef or chicken. : )

Top three on my lists are these (and I miss all these because I am working in a pork-free country, Muslim country):
1. Pork and Chicken Adobo - can be cooked mixed or separate. The meat is marinated in soy sauce and vinegar. Then sauted in onion and garlic, with a dash of pepper and laurel leaves until the sauce thickens and the meat becomes tender.
2. Lechon - It is mainly roast pig. It is more popular than roast beef in our country. Usually presented to visitors during big celebrations. A whole pot-bellied pig is cleaned and put under charcoals until the skin becomes crunchy brown. Comes with a sauce cooked from the same pork ingredients, too.
3. Pork sinigang - It's pork meat with a lot of vegetables, clear soup with tamarind base that looks like a stew of some sort.
