Anyone got a recipe for dalwar - a type of deep fried lentil rissole?!


Question:

Anyone got a recipe for dalwar - a type of deep fried lentil rissole?

As far as I can tell the ingredients are lentil ground into flour and baking powder and water to mix. Yes I know you can instant mixes but fancied making my own.

Green Lentil Rissoles

Yield: 6 Servings

Ingredients

8 oz green lentils (or brown)
2 oz butter or margarine
1 onion, finely chopped
1 carrot, chopped
1 green bell pepper, diced
2 garlic cloves, crushed
1/4 ts cayenne
1/2 ts coriander powder
1/2 ts cumin powder
1/2 ts curry powder
2 ts tomato paste
salt & pepper to taste
1 tb fresh chopped flat leaf parsley
2 oz breadcrumbs
oil for frying

Yogurt Sauce:
1/2 pt yogurt
2 tbsp freshly chopped flat leaf parsley
1 tb chives
1 garlic clove, crushed
1/4 ts cumin powder
juice of 1/2 lemon
salt & pepper to taste

Instructions:

Put lentils & hot water into a pot. Bring to a boil, reduce heat & simmer, covered for 30 minutes.

Heat margarine in a skillet, add onion & cook for 2 minutes. Add carrot & pepper & cook for 10 minutes, stirring occasionally. Add spices, tomato paste, salt & pepper. Mix together well.Then stir in lentils & let cool. Mix in parsley.

Divide the mixture into 12 equal portions & shape into rounds. Coat them in combined breadcrumbs . Shallow fry in hot oil until golden brown on both sides. Drain well.

For the yogurt sauce, combine all the ingredients & chill till ready to serve.

Are you referring to DAAL VADAS: they are an Indian snack

Ingredients:

1 cup chana daal (bengal gram)
4 small Thai green chilies, finely minced
2 dried red chilies
4 black peppercorns 4
2 tbsp freshly grated coconut
8-10 fresh curry leaves
salt to taste
oil to fry

Method:

Soak the chana daal for at least 2 hrs, drain well and keep aside until needed.

In a blender or food processor, grind the chana daal and the dried red chillies (without adding water) into a coarse thick paste. It should be dry.

Do not grind the channa daal into a smooth paste, if there is some whole daal in it, its fine. It will taste better when you fry it. Add salt and black pepper to the paste.

Remove the ground daal from mixer/blender and mix in the green chillies, curry leaves and the freshly grated coconut.

Make small balls and then press with your palm to make flat round discs. Heat the oil and deep fry on a low flame.

Serve hot with coconut or cilantro chutney.

Serves : 4 (Makes around 8 vadas)
