The main differences in tuna are the species. You are getting really bad answers. Mahi Mahi and Yellowtail are not even in the tuna family. Yellow FIN is a tuna and so is albacore which is also referred to as Shiro maguro (white tuna) by the Japanese. The main tunas in the Pacific that are used in sushi include yellow fin, blue fin, big eye, and albacore. Blue fin is by far considered the best. The Japanese pay top dollar for Blue fin tuna. It wholesales in Tokyo's tsukiji fish market for $100 a pound. The Japanese are buying almost all of the blue fin in the world. I doubt if you have ever eaten it. It is rarely seen in sushi bars in the US and even if it was available, it would be a specific order of "blue fin" because it will cost you about $20 per order (two pieces). When you order tuna at the sushi bar you are getting yellow fin or big eye. Albacore is ordered as "albacore" Toro or tuna belly has a higher fat content than the rest of the fish. It taste richer. You have to order toro specifically like albacore and yes, it cost more. Don't be afraid to ask your sushi chef what species of tuna you being served. He should know and they usually do.
