Answers:

i have to put in my $.02 worth. one thing that the best fried rice is day old or older (cooked). i know in the Philippines. they do that & i believe it was the same way originally in China. they usually cook a fresh pot every day & the next whatever meat & veggies were left then it is fried together usually with fresh garlic & scrambled eggs & some green or whatever onion is available. now days, of course it is not so much that way but before fried rice was a way to use leftovers. although you can use freshly cooked rice for fried day old is best. & i believe everyone else is correct in listing white long grain rice.
