Chinese Fried Rice?!


Question:

Chinese Fried Rice?

Any good suggestions how to make Egg Fried Rice similar to that sold by Chinese restaurants? Please include any helpful tips, for example, if I boil the rice first should it be left to cool or used whilst still hot?
Do NOT include MSG in the suggestion as the stuff makes me ill! (Which is why I want to make my own rather than buy from a take away place.)


Answers:

I use pre boiled and cooled rice, this way the rice doesnt clump together.

Beat together the eggs and fry in the frying pan, like your making an omelette. Once cooked on both sides remove and cut up,placing on a plate.

stir fry any veggies you like, peppers, onions, peas and add some soy and oyster sauce.

Add the cold rice and stir fry with the veggies, add the egg and cook for a further 5 mins.
