About food...?

i love asian food,specially pakistani...oh also the sweets are lovely;-) i tried cooking even by the book,but all goes wrong...always! what should i do?! give up trying...or you got a good advice for me?! help...?

well i did ask to my familly but to be honest i always do something wrong... too much of this or too much of that...even if i copy them...so i might be a terrible cook;-z any advice please?!

It's always trial & error but trust me, the more you practice the better you will be.

Indian food is all about spices, but more precisely, it's the manipulation of spices. All the spices you add, esp the dried ones need to be cooked well (stir fried or bhuna), otherwise you will have a raw spice taste. Turmeric (haldi) is notorious for this. You must also use salt to bring out the other flavors.

Also, always start with onion/ginger/garlic ...this must be fried for 15-20 minutes until golden. Then add your spices and fry another 4-5 minutes. Then finally add your meat (or paneer or veggies).

If the "masala" taste is too strong, mellow it out by adding some tomatoes, lemon juice or yogurt. This will help to round out all the flavors. It's all about balance. It's really hard to actually ruin Indian food, you just need to know what to add to balance out the flavors.

Try simple recipes first: aloo subji, once you have mastered this move onto aloo gobi, then aloo palak, palak paneer...you will soon be making navratan kormas, biryanis & curries!

Start with the simple recipes and master them, you will gain confidence with practice and learn about handling spices.
