Question:

What do you think of this rice dish?

I sauteed the seasoned chicken in some oil for about 20 minutes with some pieces of pork shoulder and ham then I took it off and sauteed in the same oil some onions and some peppers garlic then I added the meat to the pan then I am going to add some cups of water and some rice and let it dry out and fluff up the rice with a fork and serve with some sliced tomatos.

Answers:

Sound Yummy. The only concern is the chicken meat might be over cook. Normally, the rice need more cooking time than the chicken. This method of cooking is a little bit similar to Indian Brayni Rice and Chinese Cray pot Rice.

My suggestion -
1. Use pork bacon instead of pork shoulder, it will add favour to it.
2. Use chicken broth and some cooking wine instead of water.
3. Don't pan fried the chicken first. Add some cooking oil and chopped garlic in the pan, stir fried together with the ham and bacon. Follow by adding the rice and stir fried for 1 min with the remaining seasoning and ingredients (onions, pepper etc). Add in the chicken broth and wine. Wait till the the chicken broth with rice start to boil than place the chicken meat on top and cover the pan for the dish to cook. It might take 10 to 15 min to cook until the rice is dry up and ready to serve.
4. Please take note that the chicken broth and rice have to be in right ratio. 1 cup of rice 3/4 cup of chicken broth.
5. U can serve with tomato if u like.

By adding the chicken only at last part of cooking will ensure the meat will not be over cook and become dry. The taste of chicken will mix into the rice during cooking and make the whole dish tasty.

Happy cooking!
