Chinese cooking?!

Chinese cooking?

Went to a new chinese take-away over the weekend. The lone chef was incredible. I'd never seen into the kitchen of a chinese restaurant before.
Can you tell me why the cooking range was filled with water, streaming from a pigot?

No, I can see the point of the tank, but this was water running through the cooking range itself. It had a high rim to keep the water on the range, and the burners were set high, too,a bove the water.


Answers:

This is to keep the top of the range clean as they do a lot of frying and it splashes. The water drains away after cooking and the hob just needs a wipe down..I wish i had one!
