Good spicy beef thai dish??

I am a former chef and my favorites are the Thai currys, I prefer the red and green for beef, masaman is nice, just a basic stir fry with lemongrass, thai chilis, a bit of sweetness either hoisin sauce or sugar, lime juice for a tart contrast, a bit of fish sauce (this is an option), fruit is nice like mangos or pineapple to take some of the heat away.

I serve it over Thai Jasmine Rice or rice noodles, I sometimes garnish with nuts, peanuts or cashews. The spiciness is up to you Thai bird chili are way out there, a few chili flakes is fine.

Thai food is a balance of sour, sweet, spicy and salty, so it is one of those things you can play with, my advice is try some dishes at your local Thai restaurant and see if you can make them at home, even Pad Thai made with beef is fine.
