Does anyone know of a widespread chain of REAL sushi shops?
I'm looking for either a widespread chain or a local place in Phoenix, Arizona of REAL, AUTHENTIC sushi shops.
'Real and authentic', meaning that there's no California rolls or Spicy Tuna rolls. No American sushi, i'm looking for something 100% Japanese. Assuming that this country has any.

Your question itself is a contradiction in terms! If you are looking for an authentic "mom & pop" sushi shop, it would never be a chain!
A chain is NOT real nor authentic and will be defined by its CA rolls and spicy tuna rolls.
There are many authentic sushi places in the US, not sure about Phoenix but CA and NY has tons. Many visitors that come from Japan are more than happy with alot of the US sushi restaurants (they also get special treatment from the sushi chefs!). The best sushi places are where the sushi chefs dont speak any English and will create on the spot sushi and sashimi for you...it's creative, amazing, very very $$, delicious and worth every penny!
Surprisingly, Phoenix has more sushi restaurants than I thought.
