Indian Eggplant Vs. Traditional or Chinese Eggplant?!


Question:

Indian Eggplant Vs. Traditional or Chinese Eggplant?

I just bought some Indian eggplant and am wondering if you need to cook it any differently than Traditional or Chinese eggplant. I want to stir fry it.

I am assuming - No, but just want to confirm.

Answers:

Indian eggplants (the small ones) are esp great for stuffing. They cook just like the regular ones but are more firm and will not get mushy. They are great for stir frying!

Have you tried the small round green Thai variety? Very tasty & different.
