Answers:

A great cut of beef, refried beans, fried plantains, rice. That is usual in Nicaragua and Costa Rica.

Nacatamales in Nicaragua are like huge leaf-wrapped tamales with pork, currants, chile and plenty of other good stuff. A meal in one. Pork rind and yucca salad called chicharron con yuca, it also has cabbage and tomato, really delicious. Maduro frito, which are thick slices of fried plantain. Quesillo, which is a delicious soft cheese, or smoked cheese, which is unlike anything I have ever tasted before. Guava Jelly, absolutely the best in the world. They have great fruit too.

For all of those out there who are not really good at Geography, Central America is Guatemala, Belize, El Salvador, Honduras, Nicaragua, Costa Rica and Panama.
