Answers:
Go to the ethnic section of your local market, or to an Asian market. There's a couple of sauces it could be. It's either hoisin (Chinese BBQ sauce) or oyster sauce. A plum sauce is also available, but it''s more red than brown. If you do a lot of Chinese dishes, all 3 of these sauces would be handy to have around.

Out of curiosity, I did a search and found a generic recipe. Neither of my suggestions was correct. It's a combination of soy sauce and chicken broth. Take a look.
