Question:

Can the high intensive heat used in Chinese restaurant cooking be achieved at home?

60,000 - 75,000 btu is needed for a perfect stir fry, house stove usually between 15,000 - 25,000 btu. is it legal to install restaurant grade stove for home use?

Answers:

It is hard but there is a specialize wok burner you can buy from high end kitchen retailers, it is a single burner not as powerful asa the restaurant type, first the size of the gas line coming into a restaurant is 3 times as large as a home/domestic one, I am a former chef and have helped build places, plus the pressure of the lines being larger is more intense so this adds to the ability to have such high heat, if your in the market for one at Home Improvment place that sells restaurant style appliances might be able to help you.
