My mom doesn't like caned tomato sauce or Spaghetti sauce.She likes it made at home.(home made).Please answer.


Answers: INGREDIENTS
1/4 cup olive oil
6 tomatoes, chopped
3 onions, minced
2 green bell peppers, minced
4 cloves garlic, minced
3 tablespoons white wine
salt and pepper to taste

DIRECTIONS
In a large saucepan, heat oil over medium heat; add tomatoes, onions, green bell peppers, garlic, white wine and salt and pepper to taste.
Mix ingredients well; cover and simmer for 30 minutes. Serve. If your mother thinks she can make better spaghetti sauce or better Marinara sauce than most of the brands on the shelf, she's probably right. Most of the grocery store brands are made as cheaply as possible.

If she thinks her own sauce is spiced more to her liking than any brand on the shelf, she's even more likely to be right.

So what's your problem? You should be glad you have a mama who cares about the food she feeds her family.

In fact, you should be glad you have a mama at all. Mine has been gone 15 years, come next month, and I miss her terribly. If you don't care for your mama, ship her to me. I make the same sauce my mom made, and we are by no means italian, but it's quick and we like it.

1 soup can sized can tomato sauce
1 small can of tomato paste
1 tomato
Onion (optional, add as much as you like. I recommen cooking before hand if you don't like them crunchy)
1-2tbs Fresh garlic (substiute powder if you like, but it's not as good, and only use maybe 1/2tsp. it's way more potent)
1-2tsp Italian spices spice mix (available at any grocery store)
Browned hamburger or italian sausage (optional)

Combine all, bring to a boil and simmer until hot. You're done!

I also make sauteed mushrooms to put in it. Here is how I make them

1 carton fresh mushrooms
2tbs olive oil
1tbs butter
1/4 tsp italian Spices spice mix

Combine in fry pan, cook on med heat until mushrooms turn brown and shrink. Be careful, they can overcook quickly! I am Italian, and though a nice homemade tomato sauce is lovely, my family usually makes it with canned tomatoes. We will only use a few brands (all from Italy), but the canned factor is still there,and I don't know if your mom would be ok with that.

Here's that recipe (makes about 1 quart of sauce)

1 large can of crushed tomatoes (we like Contadina, Cento, or Pope)
1 small can of tomato sauce (she won't be able to tell!) (we only use Del Monte or Contadina)
Chopped garlic (about 2 tbsp or more)
olive oil
garlic powder
onion powder
basil
salt and pepper to taste

Put enough olive oil to coat the bottom of a large saucepan or pot. When it gets warm, gently cook the garlic (don't burn or fry it) until it is light brown and sweet. Put in as much as you like! Then, add the canned tomatoes and tomato sauce. If you like a thinner sauce, add some water. Add onion powder, garlic powder, fresh basil (about 3 leaves) and salt and pepper to taste. I also recommend a little sugar (just a pinch!) to bring out the sweetness of the canned tomatoes. Simmer until it is hot and bubbly! If you like a thicker sauce, continue cooking it down until it gets to the desired consistency, but BEWARE: reducing a sauce increases the ratio of flavorings like salt, so you may want to hold off on seasoning your sauce! Remove the basil leaves and serve atop heaps of pasta! Bellisimo!

Tips: If you like it spicy, add some crushed chili flakes or chili powder to your sauce! If you are an onion/carrot/celery lover, add them in with your garlic and gently saute until tender before adding the tomatoes.

In the summer, my family makes an AMAZING pasta dish that is fresh and light. Here's the recipe:

3 pints of grape tomatoes
olive oil
garlic
salt & pepper
garlic powder
parsley
Fresh basil (Chiffonade)
parmesan cheese (optional)
1 lb raw and prepped shrimp (optional)

Using a saute pan or large frying pan, saute your garlic in the olive oil just as before, but use a bit more oil this time. Slice the grape tomatoes in half and add to the pan, along with the spices to taste. Add the fresh basil (chiffonade just means cut into thin ribbons), parsley, and cheese once the tomatoes are softened, then remove from the heat right away (cooking herbs in oil can make them bitter! We want them fresh and summery.). The idea here isn't to pound the tomatoes into sauce per say, but it is more about the summery freshness of the tomato, so let it be its natural wonderful self, just warm and softened! If you want to add in shrimp for a really dynamite meal, cook them with the garlic (they really only take 2-3 mins for medium shrimp), then proceed with the rest of the ingredients. Serve on top of wonderful linguini or (my fave) angel hair (capellini). Is mom coming to visit? If you want home made sauce it's going to take some effort!
Get the freshest tomatoes you can find. (They don't have to be pretty!) Carefully drop whole, washed tomatoes in boiling water for a minute or so until the skins crack, then quickly plunge them into ice water. When cool enough to handle the skins slip right off. Discard the skins and remove any bruises or bad spots from the tomatoes. Now, you can do a few different things: Run them through a sieve to get the seeds out so you're left with only pulp and juice OR put them in the blender, seeds and all to puree. Whichever you choose it goes into the stock pot with FRESH minced (or pureed) garlic,FRESH onions and bell peppers, chopped, FRESH italian herbs such as oregano and basil (I cheat and use "italian blend" in the jar!) and some salt and black pepper. That's your basic sauce. You let it cook and cook....AND cook over low heat until it is as thick as you'd like and then add whatever else you want. Cooked italian sausage, ground beef, mushrooms, black olives...(My husband loves black olives in spaghetti sauce!)
Good luck! Kudos to mom for doing it the "Old- fashioned way!" (Most sauces in the stores are 100% natural, just FYI!)

10 Roma tomatos

4 cloves of garlic

1/2 green pepper

1 big onion

Oregano (NOT BASIL)

Salt and pepper

1 pound of lean ground beef or turkey



Dice and stir fry onions, garlic, and peppers. Add the meat until almost brown. While cooking the meat put tomatos in a blender and puree them. Add tomatos to the meat mix, salt, pepper and oregano. Let it cook for 1 hour and 15 minutes.

Told you. EASY Garlic sauce i looove preqo sauce!! its delicios!! If you can't make your own, get Rao's, Chef Silvio or, if you can find it, Joey Pots n Pans Marinara. All excellent jar sauces.
