Chicken enchiladas with sour cream sauce from Two Senoritas in Canton, TX. nachos tortas ahogadas

chiles rellenos

nachos

tamales

churros

the list goes on and on...... tacos, quesadillas and burritos! It depends on differentiating between eating or preparing. When i visited Mexico I love to have an appetizer of Chirico, cheese, and spices. It is fried in a skillet and served with tortillas, mmmmm. when it comes to preparing a dish, it is a tie between enchiladas, and "make yourself" burritos. The best thing about "make yourself" burritos is that it is fun for the family, kids love it. And it tastes just the way you like it. It is very simple, you just make a spiced meat, some re-fried beans, chop onions, lettuce, salsa, cheese... any thing your family likes. The children love it, because they have some control. As for the enchiladas, just make your favorite "burrito" recipe, roll them up and place them into a casserole dish with some salsa in the bottom to prevent sticking, and top it with enchilada sauce, cheese, black olive slices, extra beef (if you use beef) and bake for about 20 minutes at 300. Easy, and really good. Carne Guisada with rice and beans.

Hommade tamales.

And Migas on fresh tortillas arroz con pollo, con queso blanco y frijoles lol mexican red rice with fajita chicken without the fajita covered in the white cheese with a side of refried beans and to top it off crunch up some tortilla chips on tops, and mmmmm enjoy
