i brought some leftovers home and put them in the refrigerator and the pancakes got really hard --they were wraped up -- but hard as a rock and they were only there for less then 2 hours
Answers: If they were wrapped in plastic, make sure the air does not get to them. Wrap a piece of lightly moistened bread in the plastic. When my husband was in the Navy, I would send him baked goods with a piece of moist bread, and after traveling for 4-10 days, the baked goods were moist and yummy. You may try a ziplock bag, removing all of the air when inserting the bread. The end works the best. Source(s):
Life experiences Don't run around naked in front of them. hehehe I don't know if you can prevent it, but you can reverse it by steaming them. Use one of those splatter screens over a skillet of boiling water and pull them apart, unfolding as necessary, as they warm and soften.
I suspect they get hard because of the starch in rice flour, but that's just a guess. I had the same prob. every time I ordered moo shu (my fav Chinese dish), so I got in the habit of ordering white rice with my meal to take home. When the pancake becomes a dilemma you've got another alternative. Extra hoisin is nec. also. Freeze them! They're starch based & a lot of breads, rices, pancakes, etc, will get hard in the refrigerator due to a process called 'starch retrogradation' - the best way to prevent this is by freezing them & thawing them out in the microwave covered with a damp paper towel when you wish to eat them.
