What are some easy indian recipes?


I am looking for something that can be cooked in less that 15 minutes or so.
I'm not very familiar with the food, but I have liked what I tried so far....but when I get home after work, school etc....I'm tired.

Any help appreciated....websites certainly count ;)


Answers: This is a good cheats way to make authentic Indian. Buy jars of good indian pastes from an indian spice shop. Rogan Josh for lamb, vindaloo or madras for beef, etc.

Simply sautee a little fresh minced garlic and ginger with some sliced onion. Remove it from the pan and brown off some bit sized pieces of meat. Add about 2 T paste for every 400g (1/2lb) meat and stir until it becomes aromatic. Toss in a can of tomatoes and a pinch of salt, turn down to simmer and put your rice on.

Stir one cup of rice in a little oil then add two cups of boiling water and a pinch of salt. Reduce to simmer and put on a tight fitting lid. (This never fails provided you have a straight sided pot with a tight fitting lid and keep the proportions one part rice to two parts boiling water.)

Go and have a shower and in 15 minutes, check the rice. (Basmati is best, of course.)

Have the meal with cucumber and yoghurt.

Serve this simple veggie with hot Chapatis (Indian flatbread) and a tangy pickle.
INGREDIENTS:
1 medium cabbage (approximately 250-300 grams) sliced very thinly
2 medium potatoes quartered lengthwise and then sliced thinly (optional)
1 cup frozen or fresh peas (optional)
2 tbsps vegetable/ canola/ sunflower cooking oil
5-6 curry leaves
1/2 tsp mustard seeds
2 green chillies chopped fine
2" piece ginger grated
2 large tomatoes cut into 1" cubes
1/2 tsp tumeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp red chilli powder (use less for less spicy)
Salt to taste
Fresh chopped coriander to garnish
PREPARATION:
Heat the oil in a pan on a medium flame. Add the mustard seeds, green chillies, curry leaves and fry till the seeds stop spluttering.
Add the ginger and stir. Add the tomatoes and cook till they are pulpy.
If you are using peas and potatoes, add them now
Cook for 4-5 minutes. Add the cabbage and then the turmeric, coriander, cumin, red chilli powder and salt to taste. Mix well.
Cover, simmer and cook for 10 minutes.
Garnish with fresh chopped coriander and serve with hot Chapatis (Indian flatbread) and a tangy pickle Indian recepies are never easy, but try this one:
Grilled Lemon Chicken.
Ingredients:
4 - skinless, boneless chicken breast halves
1/3 cup - lemon juice
1/4 cup - olive oil
1 tbsp - dijon mustard
2 - large cloves garlic, finely chopped
2 tbsp - finely chopped red bell pepper
1/4 tsp - ground black pepper
1/2 tsp - salt

Method:

1. In a bowl, mix the lemon juice, olive oil, Dijon mustard, garlic, red bell pepper, salt, and pepper.
2. Set aside 1/4 cup of the mixture to use for basting.
3. Place chicken in the bowl, and marinate at least 20 minutes in the refrigerator.
4. Preheat grill for high heat.
5. Lightly oil grill grate.
6. Drain and discard marinade from the bowl, and place chicken on the grill.
7. Cook 6 to 8 minutes on each side, until juices run clear, basting occasionally with the reserved marinade. *Go to google ............... u will get a no. of
