Sweet Mango Chutney?
I'm looking for a recipe for a sweet mango chutney. One of my favorites is a mango chutney sold at the Aloha Stadium flea market in Hawaii. It's got a little bit of chili peppers in it but it's much sweeter than ones I've tried from stores. (I've recently made one from the Food Network from Alton Brown so please don't post that one). Please post a recipe!

Ingredients
3 large mangoes, peeled and cut into chunks
(Use slightly ripened ones)
2 tsp sugar or jaggery
1 tsp lime juice
5 large dates, pitted
1 tsp cumin seeds, roasted
1/2 tsp coriander seeds, roasted
Salt to taste
2 tsp cooking oil
Method
Peel the mango and cut it into small chunks.
Heat about 2 tsp oil in a pan and fry the chunks
till they turn mushy.
Drain, mash well and set aside to cool.
Blend together the rest of the ingredients with
the mango without adding any water, to a smooth
paste.
Adjust salt if needed.
Remove from blender and store in an
airtight container.
This chutney keeps well for over a week
when properly stored in the fridge. Source(s):

Ingredients:
1/2 kg mango, peeled and coarsely chopped
1 cup raisins
1 cup sugar
3/4 cup vinegar
250 gms ginger finely chopped
1 clove garlic, chopped
1 tsp salt
How to make indian mango chutney:
* Mix all ingredients and give the mixture to boiling. Reduce the heat and simmer for about 45 minutes

Ingredients:
3 quarts green mango slices (try the ripes mangoes too)
1/2 cup salt
7 cups (3 lb) raw sugar
3 cups vinegar
2 pkg (15 oz size) raisins
4 Small Hawaiian red peppers, chopped
4 tablespoons minced garlic
1/2 cup minced ginger root
METHOD:
Combine mango slices and salt; let stand overnight. Rinse and drain. Combine sugar and vinegar; simmer for 30 minutes. Add mango slices and remaining ingredients; simmer for 1 hour or until mangoes are tender and chutney is of desired consistency. Sterilize jars, fill with chutney, and seal while hot with melted paraffin. Makes 7 pints.
