Have a recipe for a spinach dish that uses bacon, eggs, and curry?


We once had some friends from Pakistan and they made the greatest spinach dish ever! And we'd like to have it again. It had some bacon, some scrambled egg, and spices like curry in it. I can't recall the other spices.... Tumeric, maybe? There was a type of seed also. Any cooks out there have any suggestions?


Answers: I have a recipe but it contains no bacon, but feel free to add it to the dish. But usually Pakistan and bacon dont mix!

Are you sure it was eggs and not paneer? Paneer is an Indian type of cheese, traditionally paired with spinach in a dish known as PALAK PANEER:

PALAK AKURI:

Ingredients:

4 fresh large eggs
8 ozs of fresh baby spinach, washed and dried, chopped
salt to taste
1/4 cup cream (or milk)
2 medium onions, finely chopped
2 cloves garlic, finely minced
1/2 inch fresh ginger, peeled & minced
3-4 small green chillies
2 small tomatoes, chopped
1/4 tsp turmeric (haldi)
1/2 tsp cumin seeds
1cup freshly chopped cilantro leaves
2 tbsp Ghee (or butter)

METHOD:

In a large mixing bowl, break the eggs. Add salt and cream and whisk lightly.

In a large frying pan on medium high heat, add a little ghee and add the cumin seeds and green chillies. After a minute or so, add the onions and fry until golden brown. Add the ginger and garlic, fry for a couple of minutes and add turmeric. Now add the tomatoes and spinach.

Cook for about five minutes, until all ingredients are well mixed. Remove from the heat completely and allow to cool slightly. Add the egg mixture, stir over medium heat until akuri resembles scrambled eggs. Mmmmm that sounds yummy. Hope someone comes up with a recipe for us. Spinach Curry

1 bunch of spinach, washed and chopped coarsely
1 onion, finely chopped
2 green chillies finely chopped
2 garlic cloves finely chopped
Salt to taste and pinch of turmeric
1/2 tsp cumin

Heat one teaspoon of oil in a large wide pot over medium heat; toast cumin and garlic. Add the onion and green chillies, stirring until soft. Add the coarsely chopped spinach. Cover and cook them under high heat for about 5 minutes, until they reduce in volume. Finally stir in salt and turmeric. Cook them 5 more minutes, uncovered, until the water from spinach reduces in quantity.
Now you can put scrambled eggs with fried bacon on it.
