Answers: Spice!
Red peppers, Jalape?o peppers, Habanero peppers, Serrano peppers, etc. and of course onion and garlic... Colombian cuisine has many influences and there are several different regional cuisines in the country. It can be spicy, caribbean style seafood; barbecued meats; arab-influenced stews; amerindian tamales, etc. It is difficult to identify a short list of flavors. It is rich and varied.
