I want to make an authentic mexican dinner plate and i need some recipes pls?


i have a bunch of pork loin chops bone in and would like to grill them and have rice (the kind with tomatoes & stuff in it), beans & cheese, salad,avacado slices & tortillas.might someone typically use pork loin chops bone in to grill for a plate like this? what seasonings should i use? thanks


Answers: Since you have pork, why dont' you chop it up into big chunks and make "chile verde"... just brown your pork in a large skillet with salt & pepper. Boil or broil 3 large fresh jalapenos & about 8 large tomatillos (they're the green tomatoe looking veggies with a husk on them), put them in a blender with a garlic clve, piece of onion, cilantro and S&P, add to your cooking pork and simmer for another 20 minutes.
Side dishes, rice & beans & some warm corn tortillas.

Mexican Roast Loin Of Pork

5 lb boneless top loin roast; pork
2 tablespoon ground red chiles; to taste
1/2 cup lime juice
1 teaspoon salt
1 teaspoon cumin; ground
1 teaspoon oregano leaves; dried
1/2 teaspoon pepper
2 cloves garlic; crushed
6 oz frozen orange juice; thawed
1/4 cup white wine; dry
1/2 cup dairy sour cream
1/2 teaspoon salt

Place pork roast in a shallow glass or plastic dish. Mix ground red chiles, lime juice, 1 tsp salt, the cumin, oregano, pepper, garlic and 1/4 cup of Orange Juice Concentrate and brush mixture onto the pork roast. Cover and refrigerate at least 8 hours. Heat oven to 325~F. Place pork, fat side up, on rack in a shallow roasting pan. Insert meat thermometer so that the tip is in the center of the thickest part of the roast and does not rest in fat. Roast uncovered until thermometer registers 170~F, 2 to 2 1/2 hours. Remove pork and rack form the pan. Strain the drippings from the pan and set aside. Add enough water to remaining Orange Juice Concentrate to measure 3/4 of a cup; stir juice and wine into the drippings Stir in sour cream and salt. Serve with the pork roast. Here's a quick easy guacamole recipe:

Finely chop a few jajapenos (use less if you want it mild).
Scoop out 2 avacados (pit removed, of course).
Use a fork to mash up the avacados until they are slightly creamy, but still chunky.
Sprinkle salt to taste.
Add the jalapenos and stir.
Mix in a couple of dallops of sour cream.
Squeeze the juice of 1 lime over it all and stir.
Keep it covered and chilled until you are ready to serve.
