I am looking for a chinese fried noodle recipe..I want the really thin white noodles that you can get at the buffets....Any ideas?


Answers: CHINESE PAN FRIED NOODLES:

Ingredients:

1 pound fresh Chinese egg noodles (dried is ok)
1 tablespoon sesame oil

Sauce:
1 tablespoon light soy sauce
2 tablespoons dark soy sauce
2 teaspoons rice wine or rice vinegar, or to taste

Other:
1 cup mung bean sprouts
2 cups shredded Napa cabbage
2 teaspoons minced ginger
1 green onion
8 tablespoons oil for stir-frying, as needed

PREPARATION:

In a large saucepan, add enough water to cover the fresh noodles and bring to a boil. Add the noodles, stirring to separate. Cook until the noodles are al dente - tender, but still firm. Drain thoroughly. Rinse with cold water, drain again, and toss with the sesame oil. If using dried noodles, cook as directed.

In a small bowl, stir together the sauce ingredients. Rinse and drain the mung bean sprouts. Wash and finely shred the cabbage. Mince the ginger. Cut the green onion on the diagonal into 1-inch pieces.

In a heavy frying pan or a wok, heat 3 tablespoons oil over medium-high to high heat. When the oil is hot, add the ginger and green onion. Stir-fry until aromatic (about 30 seconds).

Add 2 tablespoons oil. When the oil is hot, add the noodles. Quickly spread them out to the edges of the pan, and then let them cook, without stirring, until they are browned on the bottom (5 - 8 minutes).Flip over and brown the other side. Remove to a plate. Keep warm while preparing other ingredients for the meal.

Heat 2 tablespoons oil. When the oil is hot, add the cabbage. Stir-fry for 2 minutes. Pour in the sauce and bring to a boil. Thicken with a cornstarch and water mixture if desired. Stir in the mung bean sprouts. Pour over the noodles and serve hot.

VARIATIONS: you can add whatever veggies (shredded carrots, peas, baby corn...) or meat (beef, pork, chicken or seafood) tothis recipe. it is easy . take some oil in a pan . heat it . add spices as per taste. add noodles . fry them for some time . add water. heat again.it is ready to have. http://www.foodnetwork.com/food/recipes/... When you have no money this will do for a couple of bucks.

1 lb thin egg noodles (cooked)
1/4 lb butter
sour cream (optional)
salt and pepper

In a large skillet add butter let melt then add Cooked Noodles.
Fry Noodles for around 10 minutes stirring occasionally.
Let the outside of the Noodles get crispy.
Portion out and serve on a plate.
Add a dollop of Sour Cream.
Enjoy.

Ingredients

2 cups all purpose flour
1/2 teaspoon salt
2 large eggs
1 teaspoon vegetable oil
1/3 cup water

1. In a medium bowl, mix the flour and salt together.
2. In a small bowl or large cup, whisk the eggs, oil, and water together. Form a depression in the flour mixture and add the egg mixture. Mix well.

5. Using a sharp knife, slice the dough on the counter into strips 3/8-inches wide. 1. put the noodles in a bowl of water. leave it there until it gets soft
2. heat a pan with peanut oil, add some ginger (take it out before you add the noodles)
3. cut up char siu (you can get it at a local asian supermarket)
4. peel the ends of bean sprouts, it tastes much better, but you dont have to
5. cook noodles, char siu, bean sprouts. add salt
