northern food-type A typical Punjabi meal with consist of roti, daal, yogurt and curried vegetable or meat (usually chicken). It is traditionally eaten family style. Many Punjabi eat rice very infrequently and only on special occasions. Punjabi meals usually have lot of onion, tomatoes, cumin, turmeric, mustard, garlic, ginger cooked in pure cow ghee. Milk is a very important part of Punjabi food in its many form such as yogurt (dahi), lassi, paneer, makhan (white butter) and ghee.

A more traditionally way to eat is to place all the food on a Thali (a large plate). Curries and lentils or gravy/sauced items go into small bowls, and dry-cooked accompaniments are placed directly on the plate/thali.

A thal is a platter and the thali is a way of serving a traditional Indian meal. The thali is a well balanced meal with dishes that include rice, dal, vegetables, flat breads, yoghurt, chutney, pickle,papad and a sweet dish.

It is a delightful way of dining Indian. The meal is balanced (infact, it could be construed to be a form of a dietary pyramid). The tastes are well rounded from the sublime yogurts to the fiery curries, from the fresh salads to the pickled vegetables, from the sweet to the sour chutneys. The texture too runs the gamit from the crunchy papads to the softness of the rice and the soupy lentils.

In India vegetables, fish and meats are purchased fresh daily and meals are chosen for variety and contrast and are seasonal. Also Indian meals are mainly vegetarian with an optional bowl of a meat curry. A traditional meal is usually made up of the following:

- Dal or lentils
- Meat/chicken/fish curry (optional)
- Dry-cooked vegetable dish
- Plain yogurt or raita
- Rice and/or breads such as chappati, roti, paratha, puri, plain-boiled rice, pulao
- Salad called kachumber - like a fresh salsa - made of diced cucumber, red onions and tomatoes, dressed in lime juice and salt
- Pickles and relishes
- Papad
- Fresh herbal Chutneys
This is served in a platter called a Thali.

Indians subscribe to the philosophy of cooking with 6 tastes - sweet, bitter, astingent, sour, pungent and salty. We believe that tastes are elemental and if we can balance our bodies with various tastes thus preventing the onset of disease.
Many home cooked Indian meals are very simple, using the bland spices so the main ingredient may stay pure in their taste, are skillfully combined with yogurt, pickels, chutneys and condiments that are stronger and more stimulating in taste. Source(s):
