Lengua and cabeza tacos.......what's the point?


Are there people that actually prefer lengua or cabeza on their tacos? I've had both, at fiestas and taco shops, just for the sake of trying something new, but it is nowhere near as good as more typical fillings like pastor, asada, chorizo, etc. Do some people swear by them or something, or is it just kinda "tradition"?


Answers: there's tacos and there's tacos
it's really the seasoning on both the lengua and cabeza better known as barbaqoa, which both are cooked in a roasting pot and in their own juices along with onions garlic and tomatos,salt, black pepper-corn,and laurel-leafs,slow roast for 5-6 hours (also best part of the cabeza ,are the cheeks for barbaqoa,the salsa i use is a pico de gallo with lot's of lime juice and roasted japones dried chiles ,garlic,onion,pepper,and some vineger,blend well and heat prior to serving,
lengua however are the same basic spices except for more tomatos and chile ancho (dried-peppers boiled and blended ,strained )great stuff ,i guess it's what you feel like,taco bell or gourmet !! Source(s):
my-kit Mexican people have always been known not to waste perfectly good parts of their animals. Lengua/The Tongue and cabeza (cheek) are tender cuts of meat and when seasoned and dressed correctly can be an excellent taco. To compare it to asada/pastor is like comparing apples and oranges. The French are right up there with the Mexican culture as far as using all parts of the animal for consumption. Most are delicacies few people have yet to try. There are vast differences in tastes and textures to both lengua and cabeza. Give them all a try. Experience this life . They are specialty meats and so therefore better appreciated.
There was a time in America (and beyond) when animals were slaughtered by a farmer (and not in factories) and all of the animal was used to feed & clothe a family. That's where we get the saying regarding the pig: "You can eat everything except for the oink". Tradition. In the old days most cultures ate everything from the animal that they could. All Europeans did for sure; as did the Mexicans. The newer kids don't so much, but there you go!

These are traditional meats and are sometimes still enjoyed. I like carnitas, though, in anything! Some people believe that the meat of the head is the best quality meat and is the best for you. I personally can't stand it myself, but my brother will eat tongue (lengua) whenever he can get it.
