Baked Apple Tartines with Walnuts and Armagnac autumn brings the harvest in italy. the meals would consist of tomato sauces, hearty stews made with chicken, beef or pork. roasts are made, and soups as well. pizza is made any time of year. In France, I would say a cassoulet.....it is a bean stew that can be made with any kind of meat. I had a great one when I visited 2 years ago.....it is great with some freshly baked bread and a glass of red wine!
