INGREDIENTS:
4 large ripe tomatoes
1/2 cup water
2 cloves garlic
2 tablespoons ghee (clarified butter)
1 teaspoon mustard seed
6 leaves fresh curry
1 cup water
2 teaspoons white sugar
1 teaspoon paprika
salt to taste
2 tablespoons chopped fresh cilantro
DIRECTIONS:
Place the tomatoes and 1/2 cup water in a microwave-safe bowl, and cook on High 4 minutes in the microwave. Reserve the cooking water. Cool tomatoes slightly, peel, and discard skins. Process the tomatoes, reserved water, and garlic in a blender or food processor until smooth.
Melt the ghee in a skillet over medium heat, and cook the mustard seed 1 minute. Stir in the curry leaves. Pour the processed tomatoes and garlic into the skillet. Stir in remaining 1 cup water. Mix in sugar, paprika, and salt. Bring to a boil, reduce heat to low, and mix in the cilantro. Continue cooking 5 minutes. Serve warm.

Serves 4
Ingredients:
4 large very ripe tomatoes
2 tablespoons ghee or oil
1 small onion, finely chopped
- Spices -
1 teaspoon finely chopped fresh ginger
1 fresh green chilli, seeded and chopped
1 tbsp. coriander powder
1/2 tsp turmeric
Salt and freshly ground pepper to taste
Garnish
2 tablespoons fresh cilantro minced
Method:
1. Grill whole tomatoes over gas flame or under electric griller until skins wrinkle. Peel and chop.
2. Heat ghee or oil in a saucepan or karahi /Indian wok and fry the onion and ginger and green chiles until golden. Add tomatoes and remaining ingredients. Cover and cook until the tomatoes are a thick pulp and most of the liquid evaporates.
Garnish with cilantro.
Serve as a side dish or with eggs. I don't remember if you eat pork. This is more of a Mediterranean dish, but very good.
1 lb pork tenderloin, cubed
1Tblsp cooking oil
1/2 medium onion, wedged
1 14.5 oz can diced tomatoes (you could dice fresh ones)
1/2 cup raisins
1/2 tsp dried oregano
1/2 tsp cinnamon
1. Brown pork with onion in skillet. Drain off fat.
2. Stir in undrained tomatoes, raisins, oregano and cinnamon. Bring to boil, reduce heat, cover & simmer for 20-25 minutes. Serve atop cooked rice. Mmmm! i like to cook chicken thighs, chucks of tomato, banana peppers, slice of onion in a pan, one that will brown the chicken, and cover with a lid. it cooks down and makes a sauce. needs to cook for maybe one hour, until the chicken falls off the bone.
you can add a little curry to it or the rice.
i might try a little coconut milk next time.
