Answers: CHICKEN TAQUITOES

1 lb. chicken breast
1/2 onion
1 tsp. garlic (minced)
1 c. finely chopped tomatoes
6 tbsp. chicken broth
2 tsp. flour
1/2 tsp. cumin
1/2 tsp. oregano
1/2 tsp. chili powder
1/2 tsp. salt
Flour tortillas
Shredded lettuce
Cheese
1/2 pkg. taco seasoning

Cut chicken breast in narrow strips. Cook chicken in a little water. Remove excess water. Saute onion and garlic in 1 tablespoon oil 1 or 2 minutes. Stir in chicken, tomatoes, chicken broth, flour, cumin, oregano, chili powder and salt. Add 1/2 package taco seasoning. Mix well. Simmer 3-5 minutes.
Spoon 2 tablespoons of chicken mixture down center. Top with grated cheese of your choice. Fold up little sides and roll, secure with toothpicks. Fry in heavy skillet with oil until golden. Drain on paper towel, keep warm in oven. Remove toothpicks, serve on bed of shredded lettuce with chili on it, topped with taquitos.

CHORIZO ROTELLE

1/2 c. butter
2 c. mushrooms, sliced
1 (6 oz.) can pitted ripe olives, sliced
5 oz. chorizo, sliced
1 (8 oz.) can tomato sauce
1 (12 oz.) can evaporated skim milk (or use 1 c. cream)
Salt & pepper
1 lb. rotelle, cooked & drained

Heat butter in a large saucepan. Saute mushrooms, olives and chorizo for 5 minutes. Stir in tomato sauce and skim milk. Reduce heat and simmer 10 minutes. Salt and pepper to taste. Toss with rotelle and serve with Parmesan cheese. Spanish sausage, available at Hispanic grocery stores. My favorite is just a simple mexican casserole.
Brown hamburger meat or boil a chicken breast, and chop it up.
Mix a can of cream of mushroom soup, a can of cream of chicken soup, a can of rotel tomatoes, a handful of shredded cheddar & monterey jack cheese, crumble half a bag of doritos (I like the white corn best) Mix all these ingredients, and add whichever meat you chose. Top with shredded cheese. Bake in the oven or microwave until heated through. Simple and oh so good. Serve with this easy corn recipe. Take a can of corn, a small can of chopped green chile peppers, and half a bar of cream cheese. Mix all ingredients and cook in microwave or oven, whichever you put the casserole in. You will have to stir this one a few times. Ready when cheese is melted.

But , ya know, there's not much better than a good ole taco and some rotel/velveeta cheese dip.

Tacos sound good. I need to run to the store. make a burrito aka The Mexicano Eggroll!!!! Chile Verde:
Get some pork (chops are good) and cut up into small pieces. Put it over low heat with salt and a little bit of water. (I'd do about 1/4 of water for 1 1/2 lbs of meat). Cover and let simmer until water dries out. (This should be about 40 minutes or so). The water will make it tender. The fat will render out. After the meat has evaporated, raise heat (to about medium) and let meat fry up. While the meat is cooking, make the sauce. Get some green tomatillos (about 6 to 7 large ones). Blend with jalapenos (one will be good but adjust to you heat-tolerance), add a clove of garlic and a small pinch of cumin. Blend with a cup of water. Add sauce to meat, cover and simmer over low heat for about 15 to 20 minutes. Add a little bit more water if sauce reduces too much. Taste for salt and enjoy.
