What do you think of this meal?!


Question: I'm making this meal for my family, please tell me what you think. It includes dishes from mixed cultures in the middle east. Any and all input/suggestions are welcome.

Potato Kebba

1 lb. boiled potatoes
2 eggs
bread crumbs
1 lb. ground beef
1/2 c. almonds
fresh parsley
season to taste
Put meat, minced almonds, parsley on low fire for approx. 20 minutes. Mash potatoes and add eggs, mix well and add seasonings. Shape the potato mixture into a ball and stuff with the meat mixture. Dip in bread crumbs and fry in hot oil on both sides until golden brown. Serve hot.

*To be served alongside arabian rice, with small bowls of afghan green hot sauce to pour over rice/dip kebba.
*Basbousa for dessert (a sweet golden flat cake) and Arabian coffee

I love potatoes, eggs, and ground beef. This recipe sounds a lot like the potatoe pancakes my Native American Indian great grandmother, grandmother,my mother made; which I now make today. The one ingredient missing from my "pancakes" is almonds; something the American Indian did not have. Beef was also a commodity my tribe did not have ready access to; but, we substituted pork. Pigs were cheap to raise: just turn them out on the land and let them fend for themselves.

One recipe from my Indian grandmother that I love is a very simple one for fried cornmeal bread. Mix one to one and a half cups of white cornmeal into two cups of hot boiling water. When the consistency reaches a bread meal, drop big tablespoon fulls into hot bacon grease, press into corn-cake size, fry until brown on one side, turn, fry until brown on the other side, and serve with rice and pork sausage and lots of butter.

The corn cakes slathered with butter is exquisite!

It sounds really great, I want to try it...not sure where I can buy arabian rice or afghan green hot sauce. Think I'll try subbing the green sauce with Goya green pepper sauce and use either Jasmine or Basmati rice.

i would leave out the almonds if you have kids.
Rose - I don't know this dish to be from the Middle East. This is called "Papas Rellenas" in Spanish and is popular among Cubans.
The Sicilians on the other hand use rice instead of the potato and stuff the rice ball with a tomato based meat (spaghetti) sauce. The dish is called "Arancini"
